Week 10 – Goin’ Back To New Orleans

This week I was looking through pictures of the trip Kyle and I took to New Orleans for St. Patrick’s Day and found myself really missing The Big Easy. The food, the people, the music, the view, we loved every bit of the city!  So I decided to cook up a big pot of New Orleans style red beans and rice for our weekly meal prep. Not only does it taste great but your whole house will smell like New Orleans (the good smells, not Bourbon Street at 2am!). So put on some Louis Armstrong,make yourself a Hurricane and let the sounds and smell take you back to New Orleans! Laissez les bon temps rouler!

  • Tofu Salad Sandwich – I adapted this recipe from the Veganopolis Cookbook. If you ever liked egg salad than this is the recipe for you! This is a good one to give to non-vegans as well because it tastes great and they will never be able to tell that it is tofu instead of egg! *NOTE* Turmeric + Tofu creates a bright yellow color that can look a little strange after it sits for a day or so in the fridge but it is still good!!!
    •  Combine all ingredients in large bowl and chill
      • Extra firm tofu (drained, and crumbled)
      • 1 cup finely diced celery
      • 1/2 bunch green onions, sliced
      • 1/3 cup finely diced red onion
      • 1 diced bell pepper (red, yellow or orange)
      • 2 tsp turmeric
      • 1 tsp white pepper
      • 1 tsp onion powder
      • 1 tsp garlic powder
      • salt to taste
      • 1 cup veganaise
      • splash of dill pickle juice (or dill relish)
      • 1 TBS yellow mustard

  • Homemade Pickles – My friend Sarah and her family make these AMAZING homemade pickles and I had brunch with her this week and was able to score some of these gems! So delicious!



  • Red Beans and Rice – Yes,you can get amazing, smoky flavor without the meat!
    • 1 pound dried red beans
    • 1/4 cup green onions, sliced
    • 1 green pepper, diced
    • 1 yellow onion, diced
    • 1 TBS minced garlic
    • 1/2 tsp allspice
    • 1/4 tsp pepper
    • 1 tsp salt
    • 1/4 tsp red pepper flakes
    • 1/4 tsp thyme
    • 1/4 tsp basil
    • 1 tsp liquid smoke
    • Cajun Seasoning to taste
      • Soak beans in cold water overnight
      • Drain and add enough water to cover beans in a crock pot
      • Add all ingredients
      • Cook on high ~4 hours, adding more water if gets too dry

Serve over brown rice and with crusty french bread to soak up the yummy juices

Lastly, if you are planning a trip to NOLA as a vegan there are some places you must hit! First is Dreamy Weenies and their truly awesome vegan hot dogs!


Second is the galleries of Ally Burguieres. She is a fabulous artist who does some really beautiful vegan themed work. I see this magnet every day on my fridge and it makes me happy! She is right, Friends don’t let Friends Eat Friends!!!
