Week 13 – Post Vacation Glow

Sorry the post is late this week, I was on an anniversary trip with my husband to upstate New York. We chose this destination for our 5 year anniversary so that we could go to Farm Sanctuary in Watkins Glen.  If you ever need a source of inspiration, motivation and rejuvenation, check out Farm Sanctuary.  If you can’t make it here, there are so many amazing organizations all across the country that do similar work. Here is a list.  We can easily get bogged down as vegans with sad images and disheartening people so it is important to see physical evidence of why we live this life.

Breakfast

  • This is another recipe that can be completely customized to however you like it.  Here is what I used but feel free to add or subtract whatever you like!
  • Lightly saute diced bell pepper, green onion and vegan bacon
  • Press most of the water out of extra firm tofu and crumble into the pan
  • Season with onion powder, garlic powder, garlic salt, pepper, blackening seasoning and turmeric
  • Cook over medium heat until cooked through but not overcooked since it will be reheated
  • Divide mixture between the whole wheat tortillas, top with salsa and wrap in foil

Lunch 

  • Salad – Seems boring yet always satisfying!

  • Chef Roberto’s Avocado Reuben
    • This is a great take on a classic sandwich, the avocado is a nice taste and texture addition
    • *This picture has no avocado because mine weren’t ripe yet 😦  Instead I just added a little tofurkey. My sandwich looks a little sad without the avocado but it still tasted great!

Dinner

  • Gazpacho – It is upper 80’s and super humid all week here so I really needed something cool and refreshing for dinner. Gazpacho is exactly that plus it really showcases all the fresh flavors of summer and you don’t have to turn on your stove to prepare it! Bonus!!!  The only edits I made to this recipe were to add cilantro, cumin, and balsamic vinegar for some extra flavor
  • I also added whole wheat rolls and watermelon to dinner to make it a little more hearty

One final thought. Connecting with nature is the best way to strengthen our bond with the earth and all its inhabitants.  Not only that, but it is an important part of our vegan journey.  Take the time to go see this amazing planet and all its earthlings and rejoice in your place in the circle and the difference that you are making by living a vegan life.

    Farm sanctuary was such a spiritually uplifting place full of love, serenity and hope. The meals this week were equally refreshing, especially the gazpacho! I also cannot commend you enough on the mountain of breakfast burritos, a perfect post workout breakfast at 6:30 AM.
