Week 15 – Fall Apples!

The leaves are very tentatively starting to turn colors and the nights are getting cooler so that can only mean one thing…Fall in Michigan is coming!!! Michigan is a spectacularly beautiful state (let’s just ignore Detroit for a minute!) and fall is when it really shines. Fall colors, fall sports, apple orchards, Halloween prep etc..! Everyone loves fall!

To celebrate the start of the season I used apples very heavily in meal prep this week since apples and pumpkin seem to be the official flavors of fall!  I also am celebrating my first official clients this week! I provided meal prep services for two of mine and my husbands coworkers this week which was super fun! It is always nerve wracking to serve your food to other people but it went really well so I’m super excited to see what the future holds!  What is especially awesome is that neither of the clients are vegans so this was a really great opportunity to share vegan food with others!

Breakfast 

  • Power Muffins with Blueberry Raspberry Chia Seed Jam from Oh She Glows.
    • Power Muffins – These are little bites of yummy energy which is why I started calling them power muffins!
      • 1 cup whole oats or steel cut oats
      • 1 cup plant based milk
      • 3/4 cup whole wheat flour
      • 1/4 cup hemp protein powder
      • 1/2 cup brown sugar
      • 1/2 cup unsweetened applesauce
      • 2 egg replacers
      • 1 tsp baking powder
      • 1/2 tsp baking soda
      • 1/2 tsp salt
      • 1 tsp cinnamon
      • 2 Tbs wheat germ
      • Nuts, dried fruit, shredded carrots, vegan chocolate chips optional
      • Soak oats in milk for 1 hour
      • Peheat oven to 400 degrees F and spray muffin pan
      • Combine oat mixture, applesauce, egg replacers
      • In separate large bowl, whisk dry ingredients
      • Add wet ingredients to dry ingredients and mix – Do not overmix
      • Add optional ingredients (nuts, carrots, dried fruit, etc)
      • Pour in muffin pans and bake 25 minutes

Lunch

  • Waldorf Salad Wraps (This is a vegan variation on the original recipe by Ellie Krieger)
    • Mix everything together and chill.  Serve in whole wheat tortilla wraps with romaine lettuce or spinach.
      • 1/4  cup walnuts
      • 1/3 cup plain vegan yogurt
      • 1/4 cup vegan mayo
      • 2 tsp lemon juice
      • 2 tsp Dijon mustard
      • 1 tsp minced fresh thyme
      • 1 medium granny smith apple, peeled and cubed
      • salt/pepper to taste
      • 1 package extra firm tofu. Drained, cubed, saute in olive oil with blackening spice, garlic salt, garlic powder, onion powder, salt, pepper.  Saute until outsides are crispy and let cool in fridge before adding to the rest of the ingredients

  • Homemade Applesauce – I promise your house will smell AMAZING when you make this! This is something that I remember my Grandma Bum making so not only is it delicious but it has great memories attached to it too which makes for the best food!
    • I used 2 bags of Michigan grown Fuji apples but use whatever your favorite local apple variety is
      • Peel, Core and Slice
      • Place in large pot over medium-high heat
      • Add 1/4 cup water
      • Stir frequently, apples will begin to brown and get soft
      • Add cinnamon and brown sugar to taste.  Make sure you just add a little and taste each time because you won’t need a ton of sugar
      • Once apples are soft mash with wooden spoon or handheld potato masher.  You want there to still be chunks of apples
      • Cook, stirring frequently for ~15 minutes until it is the consistency that you want
      • This is delicious served cold but even better when warmed up!

Dinner

  • Tortilla Soup – This is a great crock pot recipe that can just be thrown together and left to heat all day.  I added black beans to this recipe to give a little more of a protein boost also.  This is a recipe that I have prepped before and frozen and it works great as a freezer meal! You can make a few batches, freeze them and then throw one in the crock pot whenever you need it!

  • Glo Bars from Oh She Glows – I just realized that I forgot to take pictures of the glo bars this week! For reference, here is a picture from the last time I made them!

  1. Once again a very delicious meal prep! Power muffins with homemade jam, amazing! The tortilla soup was also amazing especially with the rice addition. Also, what’s better than homemade applesauce using Michigan apples and a family recipe!
