I am out of town for a work conference so no meal prep this week 😦 BUT….I had a long flight and was reading some magazines and noticed an amazing trend! Every single magazine that I read (including the in flight magazine in the seat back pocket) had articles about how important a whole foods, plant heavy diet is for overall health. They also all included some type of article about how lack of diet and exercise is a major contributor to disease. There were several vegetarian and even vegan recipes in popular non-vegan magazines!
It is SO encouraging to see plant based diets and healthy lifestyles becoming the mainstream way to live! We are making a difference! Keep it up!
