Week 20 – Quick but Yummy!

This week was all about speed! We are in the process of selling our house, buying a new house, getting ready for the holidays, busy work schedules, etc, etc. so there is not much time to devote to meal prep!  This week I really wanted to create a menu that could be put together very quickly but would still be extremely tasty.




  • Wasa crackers with avocado spread, tofurkey lunch “meat” and tomato slices

  • Mini peppers, celery sticks, baby carrots with hummus


  • Minimal prep! Super fast!


  • Mushroom risotto and wilted greens – These are 2 of my favorite things to make and eat.  Both dishes require minimal ingredients yet have such amazing flavor.
  • Wilted Greens – I used kale and swiss chard. I think swiss chard is so beautiful! 3.1
    • 3 bunches mixed kale and swiss chard – destem and rough chop
    • 2 onions – diced
    • Extra virgin olive oil
    • 1 cup vegetable broth
    • 1 1/2 tsp liquid smoke
    • 3 TBS soy sauce or liquid aminos
    • 3 TBS apple cider vinegar
    • Salt and pepper to taste
    • Cook onions in oil in the largest frying pan that you have (a large wok is best)
    • Once the onions are soft, add the greens, salt and pepper and mix well
    • In a separate bowl mix the broth, liquid smoke, soy sauce and apple cider vinegar and pour over the greens
    • Mix often, the greens will start to wilt and have major shrinkage in a few minutes
    • Turn off the heat once all greens are soft, you don’t want to overcook and end up with mushy greens!
    • Salt and pepper to taste


  • Mushroom Risotto
    • ~6 cups warmed vegetable stock (keep warm)
    • Extra virgin olive oil
    • 1 onion, diced
    • 3 garlic cloves, minced
    • 3 cups chopped mushrooms
    • 1/4 cup sun dried tomatoes, chopped
    • 2 TBS chopped thyme
    • 2 TBS chopped parsley
    • 1 cup arborio rice
    • 1/4 cup dry white wine
    • salt/pepper to taste
    • Heat olive oil in large pan and saute onion, garlic, mushroom until soft
    • Add tomato, thyme, parsley and stir
    • Add rice and stir
    • Add wine and stir until liquid is absorbed
    • Add stock 1 ladle at a time waiting for the rice to absorb the liquid before adding more
    • Stir pretty constantly
    • Will turn creamy after ~30 minutes
    • Salt/pepper to taste

I have to share this adorable picture of our contractor’s 14 week old puppy! He was fixing our windows today so we got to hang out with his sweet puppy Luna all morning! I love this picture because it looks like she was taking a selfie!!!
