Week 22 – Taste the Memories

This will likely be my last full meal prep in our old house 😦  We are moving to a bigger house that I love but there are so many happy memories attached to our old house that I wanted to send out the kitchen in style! It felt good to fill up the house with yummy cooking smells one last time.

Breakfast

  • Pumpkin Apple Muffins – These are incredibly moist and delicious! The apple chunks are cooked in vegan butter and topped with cinnamon before they are cooked into the muffins so the apple flavor is extra tasty! We also added a tablespoon of powdered peanut butter for a little extra flavor and protein boost.

Lunch 

  • Falafel Pitas
    • I could not love falafel any more! It is so delicious and another prefect example of the power of the chickpea! For the topping I made a kale salad with…
      • Kale
      • Purple Cabbage
      •  Green Onion
      • Red Onion
      • Parsley
      • Tomato
      • Shallot
      • Dressing – extra virgin olive oil, red wine vinegar, garlic salt, lemon juice

Dinner 

  • Broccoli, Mushroom, Potato Soup with Herb Biscuits
    • For the soup I made a few edits. I added mushrooms and used cashew milk instead of soaking cashews (because I forgot!).  I also incorporated all of the cashew milk mixture into the soup to make it creamy.
    • For the biscuits I left out the vegan cheddar and instead added a little pesto to the batter.
    • Before and After Picture! Immersion blender works perfect!

Snack

  • Keeping it simple with good old fashioned fruit!

I am ready to move on but I will miss our little house! This is one of my all time favorite pictures taken at our house.  It is Jane leaping out of her sand box that she loves so much!
