I hope you all had a lovely Easter! We were lucky to have a gorgeous spring day to enjoy here!
- It is rare that Kyle and I both love a breakfast so much and when it is so easy and nutritious it is difficult to change it up! So another week of soy yogurt, granola and berries. We may be stuck in a breakfast rut but it sure is a tasty one!
- Chickpea Meatloaf with Mashed Potatoes
- Ratatouille – This recipe is kinda time consuming but totally worth it in the end! Serve over rice.
- Apples with Peanut Butter and Sunflower Seeds – Crunchy, Peanutty and Sweet! It is the perfect snack!
