Week 35 – Vegan Prep is Back! + A Vegan Cheese Revelation!

I’m back!!! Even though I have been doing meal prep I haven’t had time to update the blog so I am happy to be back!  I have my meal prep for the week plus I have recently experienced some major vegan cheese innovations that I wanted to share!

I will start with the meal prep!


  • Hot Cereal with Soy yogurt, almond milk and berries



  • Spicy Sesame Noodles
    • I added chili garlic paste and an orange bell pepper to yum up this already great recipe a bit!


  • Orange with Sunflower and Pumpkin Seeds



  • Veggie Soup with “Cheddar” Herb Biscuits
    • For the soup I just used all the leftover veggies that I had in my fridge and let it all simmer in the crock pot all day then added kale for the last 15 minutes
      • Carrots
      • Celery
      • Onion
      • Garlic
      • Can diced tomatoes
      • Can chickpeas
      • Veggie Broth
      • Bunch kale
      • Salt, pepper, onion powder, garlic powder, oregano, basil, thyme, rosemary to taste


  • “Cheddar” Herb Biscuits – Red Lobster has NOTHING on these vegan cheesy, garlicky biscuits! Super easy and delicious!
    • Make these biscuits and then add in the “cheese” and herbs from this recipe for perfection!
    • I used Follow Your Heart American Style Slices which are fantastic and I will discuss more later!


Now onto the vegan cheese discussion!!!! I am normally not a big fan of vegan cheese because some of them are seriously gross butttttt……………..I have recently had some UNBELIEVABLY AMAZING VEGAN CHEESE!!!!!!!!!!!!! I am *unfortunately* not paid by anyone to endorse anything so these are all my own unbiased opinions!

  • Miyoko’s Creamery – I bow down to this glorious woman and her amazing vegan cheese skills. It is a little expensive but it is so so so worth it! Here are some of the best ones…
    • Aged English Smoked Farmhouse – So smoky, so delicious, so incredible!18.1
    • Fresh VeganMozz – If you missed margherita pizza when you went vegan then I have great news for you!!!!!!!! This cheese makes the perfect pizza topping and is incredible in every way.


  • Follow Your Heart American Style Slices
    • I don’t know why but I just assumed that this cheese wouldn’t melt well.  That was a stupid and horrible and incorrect assumption! I used this cheese to make the best grilled cheese that I have had in years! I am not exaggerating here, it tasted EXACTLY like those terrible for you Kraft single grilled cheeses that we all ate and loved as kids! All the amazing taste but none of the cruelty!

    10 years ago, vegan cheese did not melt. I’m so happy that it’s improved by leaps and bounds! I love all of Miyoko’s cheeses too!
